I am starting the Rice Diet today! I have a question - What do you recommend for the dairy and protein portions of the program if you are vegetarian?
I know that I could use soy yogurt and maybe beans, but anything else?

Hi !!!
Welcome to the RD and the RD Forum. I have been looking through the book to find you a list of other protein and dairy choices.
Here's what I could find:
page 32 If you don't consume dairy, you need to eat 2 slices of regular bread OR 200 mg of added sodium from another source to ensure you have enough daily sodium.
pages 32-33 Calcium and sodium are in dark leafy veggies, collards, kale and especially dried beans, which are highly recommended for every day. ( the beans , that is)
pg.33 If you don't eat fish then replace it with FF dairy (milk or yogurt), eggs, or lean meat. Whatever you choose should be approx. 200 calories worth.
pg. 79 We need to eat whole grains + beans OR dairy daily to get our essential amino acids.
pg. 80 We get plenty of protein from grains, beans and veggies.
Hope you can use some of this info. to give you some choices!

Hi and welcome! I'm a vegetarian too. I made sure that this diet was compatible with being vegetarian before I decided to try it.
For your serving of dairy, the book recommends non-fat soy milk, grain milk or organic, skim cow milk, in that order.
For protein, on the "protein day" you can substitute two extra cups of non-fat soy milk.
