I've been reading the boards for two weeks now and have learned so much from everyone. I wanted to tell you about two very good and very easy recipes that have made dinner yummy. My husband had bypass surgery 10 years ago and I learned how to cook tasty but heart healthy so he would be inspired to lose weight and eat properly. Ten years later, he is in the best shape of his life and never, not ever, eats anything that would put him back in the same place he was.
Tonight I made stuffed giant portebello mushrooms:
Combine in food processor, fitted with the steel blade:
6 baby carrots
2 cloves garlic
1 medium onion
6 small mushrooms
1/2 cup parsley
1 teaspoon Mrs. Dash, any flavor but I used the chipotle flavor
1 tablespoon balsamic vinegar
1 teaspoon olive oil
-Whirl veggies until chopped but not mushy
-clean three or four very large Portobello mushrooms and place in the bottom of a baking dish
-spoon veggie mixture over top of the mushrooms and cover with foil
-bake in a 500 degree oven for twenty minute
-remove the foil and sprinkle a teaspoon of [armesan cheese over the top and bake uncoved until cheese has melted
We had these for dinner as our veggies and they really were good.
The other recipe I have invented is Honeycup mustard salad dressing:
-3 tablespoons Honeycup brand mustard
-3 tablespoon balsamic vinegar (often I reduce the vinegar by slowly boiling it on the stove which brings out the sweetness but I don't always have the time and just out of the bottle works well too
-3 tablspoons of water
Add all three ingredients in a small jar and shake well. It gives salad a great,,no fat, no salt taste. And, I noticed that Honeycup brand mustard is in the RD store. It is also at Whole Foods, at leaste here in DC.

To post recipes in the RECIPES thread on the FORUM (which is where most people post their messages), first you need to go to the Forum.
To the left of these messages you will see some purple Topics, with an arrow beside them (e.g. Support-->; then two below that The Forum -->) CLICK on the one that says The Forum-->, and
Page 1 of the Forum should come up. If not, it will be Jayne's intro page, *near the bottom of which* is a link that says "Enter The Forum"...click on this link, and P. 1 will come up.
Usually the RECIPES thread is on P. 1 or P.2 Just Scroll down each page until you see a topic called "RECIPES: Post Your Recipes Here"...and paste your recipes into a reply box.

Thanks Lony for your help. When I did WW online two summers ago, 1. it was expensive and 2. the people were not half as helpful and supportive as so many are here. It really is making all the difference for me. I started 2 weeks ago and have lost 5 pounds, which for this old bird, (51) is a minor miracle!

I'm looking forward to meeting new friends too! Thanks for the kind words. Do try the mushrooms. I was full by the time I ate the mushrooms and wasn't really interested in my 3 starches, even though I had just gotten back from the gym (60 min cadio, pushing hard!!).

I don't usually visit the Inspiration Room, mostly just stay on the Forum, but I am glad I did so I could add my Welcome Aboard.
You will find that the support system here is phenomenal - I have found nothing quite like it - there is only kindness and love found here - a gentle kick when needed but never a derogatory comment.
You can feel free to "let your hair down" and unleash all your "warts" - we are all here to help and lift you to a better, stronger, healthier place.
I encourage you to explore the Forum - there are some wonderfully informative threads on there - there is also a recipe thread so you will never want for something tasty to serve.
Congratulations too to your hubby - good for him for taking his health care to heart - sometimes we all aren't as wise as he.

Hello All. I agree that this is an extraordinary support system. Thanks for the recipe and the kind words. I've picked up several tips from the Recipe thread on the Forum that I've tried and liked a lot. I did, however, try the spring rolls (recipe from the RD book) and wasn't real thrilled with them. They had a lot of ingredients ($$), and weren't very tasty. The only good thing I can say is that they are filling and low in calories. I think I'll try again with some of my "own" ingredients. Oh well, if you don't try......I would like to say that since I've been on this dieta I really do feel better than I have in a long time, have more energy (have begun a workout regimen in the pool), am losing weight & wearing clothes that haven't seen the light of day for quite a while and am very grateful for finding this program.
