Lynnie's Oat Bars
1 cup steel cut Irish oats
4 cups water
1/4 cup dried fruit (raisins, apricots and cranberries, mixed)
2 Tbs chopped almonds
add all ingredients to the crock pot and cook on low for 2 to 4 hours (personal preference)
to make into bars pour the blend into a 10 x 8 pan and press it into the corners and smoothe out the top. Bake the mixture at 350 degrees.
It's done when the top is lightly browned. You could bake it longer if you want a crispier texture
yield 4 servings
I love this recipe. Everytime I make steel cut oats, I double the recipe so I'll have enough to make them. The rest of the oats I keep in the fridge and eat throughout the week.
I have tinkered and tinkered with this recipe and will pass on some of my experiments:
When I cook the oats, I add a stick of cinnamon and 1 t each of vanilla and almond extract.
I usually put the oats in a crockpot at night on low and it's done in the morning.
I add the fruit and nuts after the oats are cooked, just before I put them in the pan.
I also add about 1/4 c each of oat bran and wheat bran and sprinkle 1 t Sucanat (or sugar) on top
I use a 9x13 pan, sprayed with Pam, because I like mine crispier.
Cut them into 16 bars when done. Each bar will be 1 starch serving. I know this is different than the original recipe says. This is my reasoning: 4 cups of steel cut oats divided into 16 parts give us 1/4 cup oats per serving whech equals 1 serving of steel cut oats.
Pop them into a freezer bag and freeze. Use as needed.
