Your favorite menu day

Hi all, I've been here a few years and lost and gained. All in all this is a super program. The only problem is that I am not a good cook and I am not good at making up a menu. Please can some of the creative types please list a few days of eating.



Someone here used to eat a Boca type burger with a low salt bun,that sounded yummy but I could never find a low salt veg burger or bun....

I am no cook. I keep it as simple as possible. I eat oatmeal and blueberries (frozen) for breakfast just about every day. I make a big pot of bean soup on Sunday. I put lots of no salt frozen vegetables in the bean soup. I put so much vegetables in the soup that I eat 1 cup of the bean soup for lunch most week days. I put chopped onions and balsamic vinegar on top of the soup. I usually eat an orange or 1/2 grapefruit with lunch.

For dinner eat cabbage or asparagus/ and a big veggie salad with balsamic vinegar. I usually eat 2 slices of no salt bread with a touch of fruit spread. I eat frozen spinach, canned mandarin oranges, frozen fruit. I just take stuff out of the freezer and pop in microwave.

Melissa, I would love to tuck you under my wing and do all your menu planning and even food preparations for you. I LOVE planning menus and preparing foods. In fact I THRIVE on it, my menu is usually done two or three days in advance. One suggestion that I have for you is to plan your starches for your meals first. Whether it's grains, beans, pasta, potatoes or other starchy vegetables - that's where I usually start and then just add your simple fruits and veggies. I love my bean and rice salad - that's a starch combined with lots of fresh parsley, mint and lemon juice. Another favorite is angel hair pasta combined with sauteed broccoli and all the veggies I can add to it. Sometimes I make a simple potato soup and add peas or green beans - delicious. A big old baked sweet potato is another great starch. You could make a Spanish rice with no salt tomatoes and lots of onion, celery and seasonings. You might be a better cook than you think you are... you just need confidence. I've found over the years that most any meal can be made to follow the Rice Diet menu by cutting out the added sugar and salt that the recipe calls for.
I've even "doctored" up meats like ham and hot dogs that aren't on our meal plan - by soaking a ham slice or even ham and turkey deli meats in water to help remove some of the salt. Hot dogs I poke with a fork and then simmer them in hot water to remove some of the salt and fat that they're filled with..... drain off the water and simmer again in fresh water. I'm not advocating that you eat hot dogs, ham and deli meats... but sometimes due to circumstances not under my control they do find themselves on the menu, and by following the above advice... they can be tolerated. I want to be tucked under one of those wings of yours as I am sure many others wish to be there also!

Melissa.

One of my most favorite quickie meals are refried bean tacos which are made with a can of NSA refried beans or you can use NSA pintos and just mash them and add some cumin, lemon juice, onion, red pepper flakes and I use chili lime seasoning but you could use whatever taco seasoning you find that is low sodium.

La Tiara brand (Wal-Mart) has a good thin crunchy taco shell no sodium and very low in calorie.

I think they are only 30 some calories so you can have two maybe almost 3 plus one-third cup of beans plus lettuce tomato and nsa salsa.even a tad bit of avacado and no fat sour cream and you will think you are in Mexico!

Good crunchy yummy!!!!

Kaylagal: I'm living to try those tacos this week. are the NSA refried beans hard to find? i guess i'll look first at WalMart when I picking up the La Tiera shells. Great tip.

Permanent Change: I saw in the Rice Diet book that Kitty says the original Bocca Burgers don't have added sodium or sugar. Of course, these companies change their ingredients all the time. You may want to check the back of your blue book and see if there is a website for the Bocca Burgers. I use to eat those, but never thought about checking the sodium content until you mentioned them.

Still thinking about KayLagal's tacos. Yummy. Yummy.

Clover,

You make me laugh. When I began ricing the tacos are all I could come up with. I did broaden my horizons a little over time.

It is still one of my favorie ricing meals. I also like making them with a blackbean corn salsa type filling.

I can only find one grocery store in town with nsa refried beans. Pintos seem to be easier to find and cheaper too! The health food store has them but they are PRICEY!

I usually boil or pressure my beans and buy them dry/organic.

I am not sure if I posted this before or not.. one of my favorite foods is to take 4 corn tortillas and steam them in the Micro and then roll up fresh steamed hot cabbage or other veggies, with a vinaigrette low sod. low cal teaspoon of dressing. Sometimes I add a bit of rice or a shake of parm cheese. REally good.

First off...Hi to all the regulars....Nanacoon,Cat, Kaylagal and Clover...hi top the rest of ya'll too! I'm still pluggling away and my new favorite meal is no salt added beans on low salt tacos and rice. I put NSA salsa on the top...yummo....does anyone have any good recipes from the book? Leeney, this is what the "new version of Spammers" are doing, they get paid to go on boards and then search out snippets of previous posts in specific discussions and incorporate appropriate comments to make it *seem* like they are participating.
