Chocolate Low Fat Muffins

Ingredients
2/3 c Vanilla lowfat yogurt
2 ts Baking powder
Powdered sugar (opt)
1/2 ts Salt
1 1/2 c All-purpose flour
3/4 c Granulated sugar
1 ts Baking soda
2/3 c Skim milk
1/2 ts Vanilla extract

Instructions
Heat oven to 400 degrees F. Line muffin cups (2 1/2" in diameter) with paper bake
cups. In medium bowl, stir together flour, granulated sugar, cocoa, baking powder,
baking soda and salt; stir in yogurt, milk and vanilla just until combined. Do not beat.
Fill muffin cups 2/3 full with batter. Bake 15-20 minutes or until wooden pick inserted
in center comes out clean. Cool slightly in pan on wire rack. Remove from pans.
Sprinkle powdered sugar over tops of muffins, if desired. Serve warm. Store, covered,
at room temperature or freeze in airtight container for longer storage.

Yields 14 muffins.

NUTRITIONAL INFORMATION PER MUFFIN: 100 calories; 2 grams protein; 22 grams carbohydrates;
1 gram fat; 0 milligrams cholesterol; 200 milligrams sodium; 45 milligrams calcium.

Here are the substitutions I made to the recipe:
1/2 ts Salt ------------ omitted
1 1/2 c All-purpose flour ------------- I used whole grain flour
3/4 c Granulated sugar -------------- I used 1/3 cup unsweetened apple sauce, 1 tsp liquid stevia
1 ts Baking soda --------I used sodium free baking soda
2/3 c Skim milk -------- I used low fat plain soy milk

With my changes, here are the new nutritional values (note: the analyzer couldn't find low fat skim milk so I put in regular skim milk):

Oh gosh! That's funny that I didn't include a cocoa measurement -- neither did the original recipe. I used 1/3 cup of cocoa when I made these :)
