Hot Chicken Salad mmmmmmm

Hi all!

My sister has started making a hot chicky salad that we used to eat as kids.
It's delicious hot or cold, which makes it pretty evil.

I'm going to list the original ingredients and rough instructions, tell you what I did, and you can modify it to your heart's desire.
Keep in mind that I cook in huge vats and freeze it. I don't know how to cook for one, so

Frozen peas (don't cook)
Sliced black olives
1 jar pimentoes
bell pepper
celery
sliced almonds
green onion
precooked chicken, cubed
mayonnaise
MSG
Salt & Pepper
crushed potato chips
grated chedder cheese

In a big bowl toss all but the last 2 ingredients together. Add the mayo to the point where you'd normally mix regular chicken salad or tuna fish.
Spread in a 9x13 pan and sprinkle with the chips, then the cheese.
Bake, covered, for 45 minutes at 350.
Remove cover and bake for 10 more minutes or until chips crisp up and cheese browns a bit.
If you want to freeze it, put the chips and cheese on it AFTER you thaw it for the next batch.

I made mine in a lobster pot, if that tells you how much I made. You can add or subtract ingredients, or use more of what you like.
1 BJ's 20oz bag of frozen peas
1 whole package of celery
1 bell pepper each, green, red, orange, and yellow
pimentos or roasted red peppers
I hate almonds so I crushed macadamia nuts
Lite mayo or vegannaise
I love MSG, so I didn't skimp.
Unsalted, baked chips
reduced fat cheese.

I've also left the chips off completely. Not a biggie to me.

My sister was winging it and used nonfat Campbell's cream of mushroom instead of mayonnaise and couldn't keep her spoon out of it.
She uses red onion.

You're grownups, so you decide what your servings are.
It's shocking how good these flavors are together!

You DO know that these letters stand for monoSODIUM glutamate, right? This is one thing that should definitely be avoided at all costs.

Lots of these are high in sodium, too.

You DO realize I said "make it your own?"

And yes, I do realize that. I also happen to love it, but that doesn't mean I'm not MODIFYING the recipe, as I suggested one might do.
