We are getting back on track in my house. My husband and I love the results and the food on the RD. Our biggest challenge is planning. Does anyone have any tips or menus that have worked for them? I am a nurse and work 12 hour nights, hes a cop and is gone for long hours too so time it limited in our house. We are motivated but hate feeling bogged down in menu planning.

Hi Katie, how wonderful that both you and your husband are doing the RD together. That makes things so much easier. What works for me is to take one day...usually on the weekend...and do a batch of cooking. It's easy to cook up some rice or other grain or lentils, beans and freeze them in serving sized containers. I use baggies a lot because I know I'll use them up during the week. I also like to make either a big pot of soup or this time of year a marinated vegetable salad, both of which keep well for days in the frig. Those become my 'go to' foods and I supplement as needed with other items. Good luck to you both.

Hi Katie,
My plan of action has been to eat very simply for the most part. rice, fruit and vegetables and beans. I make a lot of soups.
I have family that want meats so they eat what I do and I cook supplemental meats for them.
It's nice that your husband and you are doing the RD together.
