I had a great brainstorm tonight to run some cottage cheese and fruit through my mini food chopper...It was so good!
I used sodium free cottage cheese, frozen cherries, and a touch of splenda.
I also did a very small test batch with a half a tablespoon of cocoa and frozen cherries. It tasted kind of like the cheesecake that I make at Christmas.
Anyway, I think this little sweet, creamy treat was exactly what I needed today!
Anyone else have any cottage cheese recipes? I want to try something savory to go with rice cakes. Maybe roasted red peppers and onion?

I'm so jealous! I can't find sodium free cottage cheese anywhere around here! There used to be one place, but they stopped carrying it years ago. What brand do you get?
I can't think of any recipes, per se. My usual style is just to experiment and see how things turn out. Your sweet creations sound yummy though!

Hi! I am lucky, I have a Safeway near me that carries no sodium cottage cheese. It's their store brand. I don't think any other stores around here carry it.

Our nearest Safeway is about 50 miles away
I did find that Friendship brand makes a no salt added cottage cheese and my favorite grocery store carries that brand. I'm sure they can order it for me. I'll try this week. Thanks for bringing the subject up. I'd given up on it.

For sure, ask your grocery manager to order some for you...Even if they don't want to stock it, they should be able to order a few just for you.
I just made a serving of the cottage cheese with cocoa, cherries, and splenda to take with me tonight. My friend is having a birthday, so this will be my dessert instead of cake. I did go off plan today for the first time. I had a funeral to attend this afternoon and I had some pasta salad, a finger sandwhich, and some sort of rice and tofu roll. The food part wasn't bad, just the salt. The mustard on the little sandwhich almost burned! Surprising how fast I became sensitive to it. I will probably eat a hamburger at the party tonight, fruit and my dessert...Then back on plan 100% tomorrow. I already have my food laid out for tomorrow.
