Lunch Ideas for Work

HI All, Day #2 on RD :D Loving it!
I am trying to think of good ideas / recipes that i can bring to work.
I don't eat hot food for lunch (unless i can add hot water for soups) since i dont use a microwave..

I am in the first week fyi..
so i need to stick w/ 3 starch, 3 veggies and 1 fruit.

ok, it's late and my mind tends to get fuzzy after 10pm. I know there's lots of good info on these forums bcz I've seen this asked before. When you have time, take a look through some old posts and I"m sure you'll get ideas. In the meantime, what I would do is to make a batch of rice, or whatever starch you prefer, chop up some veggies, and toss the whole thing with some vinegar...I like the balsamics...and maybe a splash of oil to help absorb the vitamins in the veggies. Grab a piece of fruit and your good to go. It's a lot of food, especially if the veggies are raw, so if there's a way for you to spread it out over time at work, that would be good.

Now I have a question for you. You mentioned that you don't use a microwave. Is that personal preference? I ask because I don't either, having heard and read about some of the nutritional damage done by them.

Banana, rice cakes, wheat germ

Cold noodles/pasta salad and fruit

You could also use a thermos to pack hot food.

I understand not using a microwave for general cooking, but to heat up something nutritious for lunch while you are at work should be an exception.

Well, what I did today was take 2 Ezekial wraps, some veggies julienned (i have a neat julienner gadget), some hommus (im considering this 1 of my starch's) and made some really yummy wraps.. a lil messy for work, so i might not do this all the time... I also like the idea of rice w/ veggies... kinda like an "unfried" veggie rice or a rice salad.

My reason for not using a microwave is that I was a raw foodist for 1 year, in which i didn't cook my food at all. I would guess that 90% of the time, my meals were raw. In the beginning, the diet suited me very well, but then I suffered thinning hair and I felt like I was missing out not eating cooked food. (the 10% of the time i would lean towards sushi, rice and starch). Since then i have been really researching macrobiotics, and quite agree with much of it, and they talk about how the energy of food is altered by microwaving food.. it causes chaotic energy, which essentially makes our thinking chaotic. I know its a little "out there" for some, but if you read the "hip chicks guide to macrobiotics" you will get a better explanation.. I also like "the kind diet" by Alicia Silverstone. So, I don't mind eating my starch cool or such, since in a sense we are all human guineapigs w/ this recent invention

In one of the experiments I read about when looking at microwave info, they had two groups of plants. One group they watered with water that had been boiled in a microwave and then allowed to cool. The other control group was watered with just tap water. I forget the time period involved, but after a while, the plants that had been watered with the microwaved water all died. I am not very good at remembering scientific data, but the upshot of the experiment was that somehow microwaving disrupts molecules in such a way as to interfere with an organism's ability to absorb nutrients. That was enough for me.

Hmm there are loads of things that you could have for lunch. You make a pasta salad with some roasted meditterean vegetables and your favorite pasta sauce and cooked pasta. You could have a chicken salad with mini croutons. You could have a wrap filled up with salad and chicken or ham. A good ole sandwich (you can never go wrong with Peanut Butter) OR you could have a cous cous salad (mmmmm) with chopped pepper, onion and small pieces of courgette && Butternut Squash.
