Arrabbiata Sauce For you spice lovers!

Arrabbiatta Sauce
Yeilds: 6 Servings

Ingredients

1 teaspoon olive oil
1 cup chopped onion
4 cloves garlic, minced
3/8 cup red wine
1 tablespoon chopped fresh basil
1 teaspoon crushed red pepper flakes (optional)
1 tablespoon lemon juice
1/2 teaspoon Italian seasoning
1/4 teaspoon ground black pepper
2 (14.5 ounce) cans peeled and diced tomatoes
2 tablespoons chopped fresh parsley
1.5 tsps Splenda Brown Sugar (optional)

Directions

Heat oil in a large skillet or saucepan over medium heat. Saute onion and garlic in oil for 5 minutes.
Stir in wine, sugar, basil, red pepper, tomato paste, lemon juice, Italian seasoning, black pepper and tomatoes; bring to a boil. Reduce heat to medium, and simmer uncovered about 15 minutes.
Stir in parsley. Ladle over the hot cooked pasta of your choice.

This looks great! I can actually see this being very good over rice and beans :-).

Just one question - I noticed that the directions mention tomato paste but I didn't see that in the list of ingredients. How much tomato paste should we add here?

Hmmm. I haven't see the person who posted this around for a while. I guess I'd probably add a couple T's to start and see how I liked it. If I open a can of tomato paste and don't use the whole thing, I put the leftover in an ice cube tray and freeze it. Then bag it and I have ready made portions...1 oz...for use later.
